Apple Cherry Salad
1 cup Chuckar dried cherries
3 tart apples, cored and chopped
2 ribs celery, chopped
1/2 cup walnuts, chopped
1/2 cup mayonnaise
2 TBSP lemon juice
1 tsp sugar
1/4 tsp nutmeg
Soak cherries for 10 minutes in water or apple juice. Drain well, pat dry. Combine cherries, apples, celery and walnuts. In small bowl, combine mayonnaise, lemon juice, sugar and nutmeg. Pour over cherry/apple mixture and stir. Chill at least one hour before serving.
 
 
 
Everyone knows how much I love Seattle thus it will come as no surprise to you that this recipe takes advantage of one of the treasures in Seattle -- Chuckar Cherries. YUM!
I recently made this recipe for Boss's Day at work. I was worried about the mayonnaise being out all day but I couldn't let the leftovers go to waste -- the salad is SO good! I did some research and discovered that the whole mayonnaise-goes-bad-quickly thing is somewhat of an urban legend. Today's store-bought mayonnaise is quite safe to eat after sitting out, doesn't need refrigeration except for taste preference (I'm still going to refrigerate mine!) and has some great health benefits! Go figure! Don't take my word for it though, check it out yourself! And do try this salad! It's scrumptious!
