Berry Baskets

1 pkg puff pastry shells (not sheets)
1/2 cup seedless raspberry jam or orange marmalade
1 tsp lemon juice
3 cups fresh fruit (blueberries, blackberries, strawberries, raspberries)
Whipped cream

 
 
 
Bake pastry shells, remove "top". (What's left is a hollow shell of pastry. Way cool!) Heat jam until melted, add 1 tsp lemon juice. Stir into fresh fruit. Pour fruit into pastry shells, top with whipped cream.



If there's a drawback to this recipe it's the cost. I used 4 kinds of berries at $2.50/container. That's $10 in berries alone. The puff pastry shells were $3.50 for 6 shells. I bought canned whipped cream for that decorator touch -- it was $2.50. The jam was $1.50. That's $17.50 for 6 servings. I thought it was pretty high, but it's worth it for an occasional treat.
