Tuscan Topping (Topping 3)
1 c Dried tomatoes in oil, drained, chopped
1/2 c Toasted pine nuts, coarsley chopped
1/2 c Scallions, minced
3 oz Asiago, grated
8 oz Provolone, shredded

Mix tomatoes, nuts, scallions, Asiago and Provolone. Use 1 1/2 - 2 Tbsp. topping to sprinkle over top of bread. You can make them the night before if you'd like. I served them over Melba Toast, sold in the cookie/cracker aisle of your local supermarket.

 
 
 
OK, so I loooooove bruschetta! There are any number of really good pesto/tomato sauces available in stores, but sometimes you want to make your own, you know?!

My boss loves bruschetta, so for her birthday this year I thought I'd make a homemade recipe. I was thrilled when I found not one, not two, but THREE bruschetta toppings, all unique, all tasty, and all very appetizing in appearance! This was tons of fun!
