Buca Salad 1 baguette, cut into 1" cubes 7 tablespoons extra-virgin olive oil salt and freshly ground pepper 1/2 cucumber, cut into 1/2" pieces 1 green pepper, cut into 1/2" pieces 2 stalks celery, cut into 1/2" pieces 2 carrots, cut into bite-sizes pieces 1/3 cup red onion, cut into bite-sized pieces 4 large fresh tomatoes (not canned!) 8 fresh basil leaves, torn or cut into small pieces 3 tablespoons red wine vinegar Pre-heat oven to 350 degrees. Toss the baguette pieces with 3 tbsp olive oil, then salt and pepper to taste. |
Spread the bread cubes onto a single layer baking sheet and bake 15 minutes, shaking the pan occasionally. Meanwhile combine the vegetables. Season with salt and pepper. Just before serving, add the bread cubes to the vegetables. Toss with 4 tbsp olive oil and the vinegar. Serve immediately. Kansas City has a wonderfully fun restaurant called Buca di Beppo! I ordered the "tomato salad", thinking I'd get a tossed green salad heavy on the tomatoes. Instead I received a huge serving dish of ... tomatoes! Not what I expected but a HUGE hit! Add fresh grated parmesan for an added treat! |
