Bert's Chicken

WHY do we call it Bert's Chicken? Because Roxan is Bert's wife and ... come to think of it, why do we call it Bert's Chicken?!? Hey Roxan, something's wrong with this picture!!!

To be honest, I have no idea how to make the official recipe. I only know that I had the pleasure of eating the chicken one night, I overheard Roxan describing how she made it, and I went home the following night and tried to duplicate it! I don't even know if I'm close but this is some gooooood chicken, and it's become a staple around here!

 
 
 
Roxan says she uses mashed potato flakes sometimes instead of bread crumbs. I've tried it both ways and it's great!! Generally speaking, adults like it better with crumbs, kids like it better with potatoes!

No matter how you slice it, it's GREAT!
