Becky's Mango Salsa

1 medium green bell pepper, coarsely chopped
1 medium red bell pepper, coarsely chopped
1 small onion, coarsely chopped
1 firm, ripe mango, peeled and coarsely chopped
1 tbsp chopped jalapeno pepper
1/4 cup chopped fresh cilantro
2 tbsp white vinegar
2 tbsp olive oil
1/4 tsp salt
1/4 tsp coarsely ground black pepper

 
 
 
Mix together all ingredients together. Let stand at room temperature 30 minutes before serving.





Note: If you've never peeled a mango before (like me!), you're probably going to think that you've botched the recipe before you've even started! They're not the easiest things to peel, but trust me, when you add the other ingredients, this is going to be BEAUTIFUL and tasty!!
