Mom's Pecan Roll

7 oz jar marshmallow creme
1 lb. powdered sugar
1 tsp vanilla
3-oz jar maraschino cherries, drained & cut into small pieces
14 oz caramels
3 Tbsp. water
2 cups pecans

 
 
 
Combine the first 4 ingredients. Mix well with hands. Ha ha ha! Just try mixing 1 pound of powdered sugar with a mere 7 ounces of marshmallow creme! Sounds easy, right? Go ahead, try it! Shape into 5 4x1" logs. Chill 2-3 hours. Oh, by the way, really do chill it 2-3 hours. You'll find out why in the next step. Combine caramels and water. Melt. Dip logs in caramel. Roll in pecans. Piece of cake. Right? In case you hadn't noticed yet, when you mix powdered sugar, marshmallow creme and cherries, the log comes out...well, flesh colored. (Eeeuuuwww.) And because there is so much powdered sugar in the tightly packed log, it's very dense. They're more like bricks than logs. Keep reading...
