Pope Soup (Step 1)
AKA Honeyed Potato and Tomatillo Salsa Dueto

The Honeyed Potato Soup
3 cups vegetable or chicken stock
1 pound potatoes (about 3 medium), peeled and chunked
salt and white pepper to taste
1 onion, cut in chunks
1/4 cup heavy cream
1 Tablespoon honey

 
 
 
Bring the stock to a boil in large pan, add potatoes and onions, salt and pepper to taste. Reduce heat and simmer, partially covered, until tender, about 15-20 minutes.

Puree in a blender, then blend in the cream and the honey. Pour back into the saucepan and keep on a low simmer.

Now you're ready for Step 2! (It's worth it, believe me!)
