7 pieces thick-sliced bacon
4 ounces Gruyere cheese, grated
8" baked pie shell (9" shallow pie crust is fine)
3 large eggs
7/8 cup whipping cream
2 tablespoons milk
1/4 teaspoon freshly grated nutmeg

Cook bacon until crisp; drain thoroughly, pat with paper towels. Cut each slice of bacon into 4 pieces. Layer bacon, then cheese over crust. Preheat oven to 350 degrees F. Beat eggs thoroughly. Add cream and milk and continue beating until combined. Sprinkle in nutmeg and stir well. Pour over bacon and cheese. Bake 30-40 minutes or until quiche is set. Check with a spoon to make sure no uncooked liquid remains in the center. Serve immediately. |
