Not Just Another Relish
1 sweet orange
1 cup whole cranberries (washed)
1 teaspoon of grated fresh ginger (optional)
2 teaspoons grated fresh cilantro
2 teaspoons chopped jalapeno peppers
Maple syrup to taste

Thoroughly wash the orange and peel it. Throw out the white pith and seeds. In a food processor, chop the cranberries, orange peel, orange pulp, ginger, cilantro, and peppers into a small relish dice. Add maple syrup to taste. Cover and let it stand for about 30 minutes. (Refrigerate if needed, but don't add syrup until relish is at room temperature.)

 
 
 
Note: Do I EVER stick to the recipe?!?! Noooooo!!

I don't have a food processor so I chop the ingredients in a blender, which means that it comes out pureed, just like the recipe says NOT to do! It still tastes wonderful! (And looks pretty, too!) The ginger is optional, but I always add it, mostly because I like to look sophisticated in the grocery store buying fresh ginger!!! (As if I'd know what else to do with the funny looking root!) Half the time I forget to add the syrup at the end and it's still edible!
