Spice-Roasted Porterhouse Steaks
Really! No, really!

Place two 2” thick porterhouse steaks on a heavy rimmed baking sheet. Brush both sides with a full-flavored olive oil, then rub 1 ½ tablespoons of the Coriander-Herb Spice Rub into each side of the steak.

Preheat the oven to 450 degrees F. Roast steaks until a meat thermometer inserted into the center registers 125 degrees F for rare, about 25 minutes. Transfer the steaks to a cutting board, cover loosely with foil, and let rest 10 minutes. (Meat will continue cooking.) To serve, slice into thin pieces and serve each guest part of the loin side and the fillet side.

 
 
 
Coriander-Herb Spice Rub
2 TBSP coriander seeds
2 TBSP peppercorns
3 TBSP fresh chopped thyme
3 TBSP fresh chopped rosemary
1 TBSP coarse salt

Toast coriander seeds in heavy skillet over medium heat until aromatic, about 2 minutes. Transfer to mortar or spice mill. Add peppercorns and crush. Mix with remaining ingredients. Store airtight in refrigerator for up to 3 days.
