Warm Mushroom & Stilton Salad
No, no! Don't turn your nose up because of the Stilton cheese!!! I'm not a fan of bleu cheese so this recipe was a bit of a risk, but it was AWESOME! I loved it! Please, please try it!!! Stilton is a strong cheese (and frightening to look at!) but it goes so well with the other flavors of this recipe!!

This is another recipe I've clipped from the April 2005 issue of Bon Appetit. OH my gosh, I ate and ate and ate and ate tonight, this was SO good. Pancetta with onions and mushrooms is fantabulous! Poured over salad with Stilton cheese it's divine! (I may have used that same word when describing last night's steak! I'm eating good this week!)

 
 
 
The problem was the Sherry wine vinegar. I thought I had a bottle of red wine vinegar, which I often use for salad dressing. It had disappeared, so I didn’t know what to do. I had some balsamic vinegar seasoned with Italian seasonings, so I decided to give that a try in the mushrooms. For the salad itself, I used olive oil and apple cider vinegar.

OK, so maybe I botched the official recipe with the substitutions, but regardless it was out of this world!! I ate one giant salad and then went back for another!! Pancetta, mushrooms and onions are a good combo!! Anything else is icing on the cake!
