Not-Sun Dried Tomatoes!
As many tomatoes as you've got!
Olive oil
Garlic cloves
Fresh basil (dried if you don't have fresh)
Thyme (I used dried)

Lightly grease a cookie sheet with sides. Wash the tomatoes and put them on the cookie sheet in a single layer. Drizzle them lightly with olive oil. Mince a bit of the garlic and sprinkle it on the tomatoes; leave some of the cloves whole and put them around the tomatoes. Sprinkle generously with basil and thyme. Bake at 250 degrees F for 6-8 hours.

 
 
 
I baked them for 6 hours because (1) I wanted to go to bed and, (2) I thought I smelled them burning. I actually probably should have let them go the additional two hours. They're very sweet and tasty -- so much flavor! But they're pretty moist inside and I wonder how long they'll keep. Next time I'll bake them 8 hours or I'll cut them in half and bake them 6 hours.
